I saw this recipe on allrecipes.com and modified it. It's moist, with plenty of carrot-y goodness, and just the right amount of spices.

Ingredients
- 2 cups all-purpose flour
- 1 cup brown sugar
- 1 cup granulated white sugar
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon nutmeg
- 4 large eggs
- 1 1/3 cups vegetable oil
- 1 teaspoon vanilla extract
- 4 cups grated carrots
How To Make carrot cake

Step 1Preheat oven to 350 degrees F. Grease and flour a 9 x 13 baking dish. In a medium bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. Set aside.

Step 2In a large bowl, beat the sugars and eggs together until thick. Stir in the oil and vanilla, then gradually mix in the flour mixture. Fold in the carrots. Spread evenly into the prepared pan.

Step 3Bake for 40 - 45 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean. When completely cool, frost with your favorite cream cheese icing.
