very moist and very yummy. i used to make this for my ex-husband who is a truck driver and it was such a big hit i used to have to make it for half the trucking fleat.

Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup oil
  • 2 cups grated carrots, raw
  • 1/2 cup walnuts,crushed (optional)
  • 1 can (8 oz) crushed pineapple, drained
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 2 cups sugar
  • 1/2 cup pineapple juice
  • 4 - eggs
  • 8 ounces cream cheese
  • 1/2 cup butter
  • 2 teaspoons vanilla
  • 1 pound confectioners sugar

How To Make carrot cake

  • Step 1
    preheat oven 350 degrees. grease and flour a 13x9" pan or a tube pan, or two square pans
  • Step 2
    in a large bowl, combine flour,baking powder,baking soda,salt,cinnamon,and sugar.
  • Step 3
    put a hole in the center of the dry ingredients and add:oil,pineapple juice,and unbeaten eggs. add crushed pineapple, carrots and walnuts and mix well bake 35 to 45 minutes
  • Step 4
    cream cheese frosting: mix together cream cheese,softened butter,vanilla and confectioners sugar until smooth. then ice cake when completely cooled. ( you may wish to reduce above amount slightly for a thinner icing)
