very moist and very yummy. i used to make this for my ex-husband who is a truck driver and it was such a big hit i used to have to make it for half the trucking fleat.

Ingredients
- 2 cups flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup oil
- 2 cups grated carrots, raw
- 1/2 cup walnuts,crushed (optional)
- 1 can (8 oz) crushed pineapple, drained
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 2 cups sugar
- 1/2 cup pineapple juice
- 4 - eggs
- 8 ounces cream cheese
- 1/2 cup butter
- 2 teaspoons vanilla
- 1 pound confectioners sugar
How To Make carrot cake

Step 1preheat oven 350 degrees. grease and flour a 13x9" pan or a tube pan, or two square pans

Step 2in a large bowl, combine flour,baking powder,baking soda,salt,cinnamon,and sugar.

Step 3put a hole in the center of the dry ingredients and add:oil,pineapple juice,and unbeaten eggs. add crushed pineapple, carrots and walnuts and mix well bake 35 to 45 minutes

Step 4cream cheese frosting: mix together cream cheese,softened butter,vanilla and confectioners sugar until smooth. then ice cake when completely cooled. ( you may wish to reduce above amount slightly for a thinner icing)
