This is a favorite carrot cake recipe in our family and extended family. Very moist and good to the very last bite.

Ingredients

  • 2 c
    granulated sugar
  • 3 large
    eggs
  • 3/4 c
    vegetable oil
  • 3/4 c
    buttermilk
  • 2 tsp
    vanilla
  • 2 tsp
    cinnamon
  • 2 c
    all purpose flour
  • 2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 c
    shredded carrots
  • 1 can(s)
    8 oz crushed pineapple
  • 1 c
    flaked coconut
  • 1 c
    chopped nuts

How to Make Carrot Cake

Step-by-Step

  1. In a large bowl mix together sugar, eggs and oil until thoroughly combined. Add buttermilk, vanilla, and cinnamon. Mix until combined.
  2. Sift together flour, baking soda, and salt, in a medium bowl; than add to wet ingredients. Mix just until combined. Stir in shredded carrots, crushed pineapple, flaked coconut and chopped nuts; Just until incorporated.
  3. Lightly grease 9 by 13 pan. Pour in batter and place in preheated 350 degree oven. Bake 55 min or until toothpick comes out clean.
