Ingredients
- 2 cups granulated sugar
- 3 large eggs
- 3/4 cup vegetable oil
- 3/4 cup buttermilk
- 2 teaspoons vanilla
- 2 teaspoons cinnamon
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 cups shredded carrots
- 1 can 8 oz crushed pineapple
- 1 cup flaked coconut
- 1 cup chopped nuts
How To Make carrot cake

Step 1In a large bowl mix together sugar, eggs and oil until thoroughly combined. Add buttermilk, vanilla, and cinnamon. Mix until combined.

Step 2Sift together flour, baking soda, and salt, in a medium bowl; than add to wet ingredients. Mix just until combined. Stir in shredded carrots, crushed pineapple, flaked coconut and chopped nuts; Just until incorporated.

Step 3Lightly grease 9 by 13 pan. Pour in batter and place in preheated 350 degree oven. Bake 55 min or until toothpick comes out clean.
