In 1976 I gave my Hubbie a surprise Birthday Party. family and close friends brought some great dishes and desserts, plus all of the Food that I prepared we could have served the whole neighborhood, and we had about 40 people at the party. :-) This cake came to the party via a good friend Debi C. and left the star of the desserts. I have been making it ever since. And don't forget the Cream Cheese Frosting. I will give you that recipe too.

Ingredients
- 2 cups sugar
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 4 - eggs
- 1 1/2 cups oil- i use mazola corn oil
- 4 cups grated carrots
How To Make carrot cake

Step 1mix the first 4 dry ingredients together in your mixer bowl,(I use the flat paddle attachment) then crack each egg in a separate bowl, and add one at a time, using slow speed. also add the oil and mix, then the carrots and beat all together for 3 minutes on medium speed.

Step 2Spray a 13 X 9 inch glass pan, with pam spray (just the bottom not the sides). Then add the batter and bake at 350' for approx. 45 minutes, or until a toothpick comes out clean. When cool, frost with Cream Cheese Frosting. Yummy
