I have never even tried this recipe but apparently it's really tasty though since I was asked to bring one to Phoenix from San Diego lol

Ingredients

  • CAKE

  • 2 c
    sugar
  • 1 tsp
    salt
  • 2 tsp
    baking soda
  • 1 c
    chopped walnuts
  • 2 c
    grated carrots
  • 3
    eggs
  • 2 tsp
    vanilla
  • 2 c
    flour
  • 2 tsp
    cinnamon
  • 1 small can(s)
    crushed pineapple
  • 1 1/2 c
    oil
  • GLAZE

  • 1 c
    sugar
  • 1/2 c
    milk
  • 1/2 tsp
    vinegar
  • 1/2 clove
    cube butter
  • 1 Tbsp
    corn syrup
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    vanilla extract
  • OR CREAM CHEESE FROSTING

  • 1 stick
    butter, softened
  • 1 (8oz) pkg
    cream cheese
  • 1/2 tsp
    vanilla

How to Make Carrot Cake

Step-by-Step

  1. For the cake, preheat oven to 350 degrees F.
    Don't sift flour. Mix cake all cake ingredients in order. Pour into a greased and floured 9"x13" baking pan. Bake for about 50 minutes.
  2. For the glaze, mix ingredients in pan, bring to boil, and cook for 5 minutes. Poke holes in cake with toothpick or fork and pour over cake while it's still hot.
  3. For the cream cheese frosting, cream the ingredients together and spread over completely cooled cake.
