I have never even tried this recipe but apparently it's really tasty though since I was asked to bring one to Phoenix from San Diego lol

Ingredients

  • CAKE
  • 2 cups sugar
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 cup chopped walnuts
  • 2 cups grated carrots
  • 3 - eggs
  • 2 teaspoons vanilla
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 small can crushed pineapple
  • 1 1/2 cups oil
  • GLAZE
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 teaspoon vinegar
  • 1/2 clove cube butter
  • 1 tablespoon corn syrup
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • OR CREAM CHEESE FROSTING
  • 1 stick butter, softened
  • 1 (8oz) package cream cheese
  • 1/2 teaspoon vanilla

How To Make carrot cake

  • Step 1
    For the cake, preheat oven to 350 degrees F. Don't sift flour. Mix cake all cake ingredients in order. Pour into a greased and floured 9"x13" baking pan. Bake for about 50 minutes.
  • Step 2
    For the glaze, mix ingredients in pan, bring to boil, and cook for 5 minutes. Poke holes in cake with toothpick or fork and pour over cake while it's still hot.
  • Step 3
    For the cream cheese frosting, cream the ingredients together and spread over completely cooled cake.
