I got this many many years ago & it is really great and moist. I have to take it to our family reunion each year, or will probably be banned. LOL

Ingredients
- 2 cups flour
- 2 cups sugar
- 1 1/2 cups salad oil
- 3 cups carrots, grated
- 1 cup pecans, chopped
- 2 teaspoons cinnamon
- 2 teaspoons soda
- 2 teaspoons baking powder
- 1 teaspoon salt
How To Make carrot cake

Step 1mix together: 2 cups flour 2 cups sugar 1 1/2 cups salad oil add 4 eggs, one at a time and mix

Step 2mix in well: 3 cups grated carrots 1 cup chopped pecans 2 tsp cinnamon 2 tsp soda 2 tsp baking powder 1 tsp salt

Step 3mix well, bake at 375 degrees for 40 minutes. everyone's oven is different, so time will vary. check with toothpick. leave out 1 to 2 hours to cool before icing.

Step 4Icing: 8oz package cream cheese, softened. 2 tsp vanilla 3 1/2 cups powdered sugar cream together and spread on cooled cake
