1 1/2 csalad oil

3 ccarrots, grated

1 cpecans, chopped

2 tspcinnamon

2 tspsoda

2 tspbaking powder

How to Make CARROT CAKE
- mix together:
2 cups flour
2 cups sugar
1 1/2 cups salad oil
add 4 eggs, one at a time and mix - mix in well:
3 cups grated carrots
1 cup chopped pecans
2 tsp cinnamon
2 tsp soda
2 tsp baking powder
1 tsp salt - mix well, bake at 375 degrees for 40 minutes. everyone's oven is different, so time will vary. check with toothpick. leave out 1 to 2 hours to cool before icing.
- Icing:
8oz package cream cheese, softened.
2 tsp vanilla
3 1/2 cups powdered sugar
cream together and spread on cooled cake
