Here is my very favorite cake recipe. This is just a little bit different from your average carrot cake because it has pineapple in it.

Ingredients
- 4 - eggs
- 2 cups sugar
- 1 1/2 cups cooking oil
- 2 cups flour
- 1 1/2 teaspoons soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 cups grated carrots
- 1 cup drained crushed pineapple
- 1 1/2 cups chopped pecans
How To Make carrot cake

Step 1cream eggs, 2 c. sugar and 1 1/2 cooking oil.

Step 2mix:flour, soda, salt and cinnamon. add to cream to mixture, then add to carrots, pineapple, and pecans.

Step 3pour into a greased bundt pan and bake at 350 for 50-60 mins. cream 8 oz. cream cheese, 1/2 stick of butter and 2 cups powder sugar, then add 2 tsp. vanilla. mix well with electric mixer. spread on cooled cake.
