This is another one of my family's favorites.

Ingredients

  • 1 1/4 cups vegetable oil
  • 2 cups sugar
  • 2 1/4 cups flour
  • 1 small can crushed pineapple,drained
  • 4 - eggs,beaten
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 2 cups carrots,grated
  • ICING:
  • 1 stick butter,softened
  • 1 - 8 ounce pkg.cream cheese,softened
  • 1 box powdered sugar
  • 1 teaspoon vanilla
  • 1 1/2 cups chopped pecans

How To Make carrot cake

  • Step 1
    Blend cake ingredients,bake in 3 round greased and floured cake pans.Bake at 350 degrees.cake is done when it releases from the sides of pan.
  • Step 2
    Icing:cream butter and cream cheese until smooth.Slowly blend in powdered sugar,then add vanilla,then pecans.
