tonya's ultimate carrot cake
I searched all over to find a carrot cake recipe that had all these ingredients and couldn't find one so I changed/converted one to get the results I wanted. I've been told by everyone that tasted it that this is the best carrot cake ever. I use a basic cream cheese frosting. Instead of 2 cups all purpose flour, try 1 c. flour and 1 c. cake flour but if you don't have cake flour it will still come out scumptous. Enjoy!!

Ingredients
- 1 1/2 cups sugar
- 1 cup vegetable oil
- 3 - eggs
- 2 cups all purpose flour
- 1 1/2 teaspoons cinnamon, ground
- 1/4 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 3 cups shredded carrots
- 1 cup pineapple crushed, drained
- 3/4 cup white raisins
- 1 cup nuts
- 1 cup shredded coconut, optional

Step 1Mix sugar, oil and eggs in large bowl until blended

Step 2Stir in flour, cinnamon, baking soda, salt, nutmeg and vanilla.

Step 3Add carrots, pineapple, coconut, raisins and nuts.

Step 4heat oven to 350 degrees. Pour batter into 13 x 9 x 2, (2) 9" round or (2) 8" round pans, well greased and floured or use baking spray. Bake for 30-35 minutes or until toothpick inserted in center comes out clean. Cool and frost as desired.
