My husband's favorite. Great for Fall gatherings. A Thanksgiving dessert staple.

Ingredients

Cake:
4 eggs
2 c
sugar
1-1/2 c
vegetable oil
3
small jars of baby food carrots
2 c
all purpose flour
2 tsp
baking soda
1 tsp
salt
3 tsp
cinnamon
Frosting
4 oz. softenend cream cheese
1/2 tsp vanilla
1/2 cup softened butter
1-3/4 c. 10xx sugar

How to Make Carrot Bars

Step-by-Step

  • 1Prepare either a 1/2 sheet pan or 9x13 pan with baking spray. Combine the eggs, sugar, oil and baby food.
  • 2Fold in the dry ingredients: flour, baking soda, salt and cinnamon. Combine well.
  • 3Pour batter in to preferred pan. Bake at 350 degrees for 20 minutes for sheet pan and about 30 minutes for 9x13 pan. Test with toothpick in center for doneness.
  • 4Combine frosting ingredients until smooth. Frost on cooled cake. Cut into bars. For the Fall season, I sprinkle Fall colored "jimmies" on top. These are great for Bake Sales, cut and put in packages of six.
