My husband's favorite. Great for Fall gatherings. A Thanksgiving dessert staple.

Ingredients

  • Cake: - 4 eggs
  • 2 cups sugar
  • 1-1/2 cup vegetable oil
  • 3 - small jars of baby food carrots
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • Frosting - 4 oz. softenend cream cheese
  • - 1/2 tsp vanilla
  • - 1/2 cup softened butter
  • - 1-3/4 c. 10xx sugar

How To Make carrot bars

  • Step 1
    Prepare either a 1/2 sheet pan or 9x13 pan with baking spray. Combine the eggs, sugar, oil and baby food.
  • Step 2
    Fold in the dry ingredients: flour, baking soda, salt and cinnamon. Combine well.
  • Step 3
    Pour batter in to preferred pan. Bake at 350 degrees for 20 minutes for sheet pan and about 30 minutes for 9x13 pan. Test with toothpick in center for doneness.
  • Step 4
    Combine frosting ingredients until smooth. Frost on cooled cake. Cut into bars. For the Fall season, I sprinkle Fall colored "jimmies" on top. These are great for Bake Sales, cut and put in packages of six.
