My husband's favorite. Great for Fall gatherings. A Thanksgiving dessert staple.

Ingredients
- Cake: - 4 eggs
- 2 cups sugar
- 1-1/2 cup vegetable oil
- 3 - small jars of baby food carrots
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3 teaspoons cinnamon
- Frosting - 4 oz. softenend cream cheese
- - 1/2 tsp vanilla
- - 1/2 cup softened butter
- - 1-3/4 c. 10xx sugar
How To Make carrot bars

Step 1Prepare either a 1/2 sheet pan or 9x13 pan with baking spray. Combine the eggs, sugar, oil and baby food.

Step 2Fold in the dry ingredients: flour, baking soda, salt and cinnamon. Combine well.

Step 3Pour batter in to preferred pan. Bake at 350 degrees for 20 minutes for sheet pan and about 30 minutes for 9x13 pan. Test with toothpick in center for doneness.

Step 4Combine frosting ingredients until smooth. Frost on cooled cake. Cut into bars. For the Fall season, I sprinkle Fall colored "jimmies" on top. These are great for Bake Sales, cut and put in packages of six.
