This Carrot Banana Cake is quite delicious, and it's very moist as well. So when I serve it the next day, I sprinkle it again with a bit more powdered sugar.

Ingredients For carrot banana cake

  • 1-1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon of salt
  • 1 cup finely shredded carrots
  • 2/3 cup mashed ripe bananas
  • 1/2 cup cooking oil
  • 2 eggs
  • sifted powdered sugar, to sprinkle on top of the baked cake

How To Make carrot banana cake

    In a bowl stir together, the flour, sugar, baking powder, baking soda, cinnamon and salt. Set bowl aside.

    In another bowl, add the shredded carrots, mashed banana, cooking oil, and the eggs. Mix together thoroughly with a spoon.

    Now pour into a greased and lightly floured 9x9x2-inch baking pan.

    Bake in a 350°F. oven for 30 minutes.

    Insert a toothpick in the center of the cake, to be sure it's done baking.

    Allow cake to cool completely, then sprinkle with powdered sugar on top.
