Well found this easy recipe and made it my own ~ Great recipe for a Christmas treat, makes a 13x9" pan, perfect. Cut the pieces small ~ enough for all ~ Mine was done at exactly 40 minutes ~ Electric stove

prep time 15 Min
cook time 40 Min
method Bake
yield 13 x9" pan

Ingredients

  • 3 - eggs
  • 2 cups sugar
  • 3/4 cup butter, softened
  • 1 teaspoon almond extract
  • 2 cups all purpose flour
  • 12 ounces fresh cranberries
  • I ADDED FINELY CHOPPED ALMONDS ~ ABOUT 1/2 TO 1 CUP TO TASTE

How To Make carol's cranberry christmas cake

  • Step 1
Preheat oven to 350 degrees. Butter a 13"x9" pan.
  • Use fresh cranberries.
    Step 2
With a mixer, beat the eggs with the sugar until slightly thickened and light in color, about 5-7 minutes.
  • Lightly browned when done.
    Step 3
The mixture should almost double in size. The eggs work as your leavening agent in this recipe, SO DO NOT SKIP THIS STEP.
  • Original recipe called for vanilla extract ~ I used almond extract to go with the chopped almonds.
    Step 4
This mixture should form a ribbon when you lift the beaters out of the bowl. Add the butter, vanilla; mix two more minutes.
  • Step 5
Stir in the flour until just combined. Add the cranberries and chopped almonds and stir to mix throughout.
  • Step 6
Spread in a buttered 13"x9" pan. Bake for 40-50 minutes, or until very lightly browned and a toothpick inserted near the center of the cake comes out clean. (I baked mine 40 minutes.)
  • Cooked for 40 minutes in my Electric oven ~ Don't overcook.
    Step 7
Let cool completely before cutting into small slices. I cut mine into fairly small pieces, about 1"x2", so that they could be easily eaten at a party or Holiday get-together . Enjoy!
