carmel apple cake
I found this cake in Taste of Home recipes and it is one of my favorite cakes

Ingredients
- 1- 1/2 cups canola oil or veg oil
- 1-1/2 cup sugar
- 1/2 cup brown sugar, firmly packed
- 3 - eggs
- 3 cups all purpose flour sifted
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon, ground
- 1/2 teaspoon nutmeg
- 1 teaspoon soda
- 1/2 teaspoon salt
- 3-1/2 cups granny smith apples diced
- 1 cup chopped walnuts
How To Make carmel apple cake

Step 1In a mixing bowl, combine oil and sugar mix well, add eggs, one at a time, mix well. Combine dry ingredients and add to batter, stir well. Fold in apples, walnuts and vanilla.

Step 2Grease and flour 10" tube pan. Pour batter in and bake at 325* for 1-1/2 hour or until tests done. cool in pan 10 min and remove. cool completely and cover top with the following carmel icing.

Step 3CARMEL ICING 1/2 cup packed brown sugar 1/3 cup light cream 1/4 cup butter or marg dash salt 1 cup powdered sugar 1/2 cup walnuts for the top

Step 4In the microwave heat brown sugar, cream, marg and salt until sugar dissolved, cool add powdered sugar and make it to the consistency you would like. pour over the cake and top with walnuts. I make double of the icing as we like to have enough to put on the slice of cake if we want.
