mildred's caramel icing & cake

This was in the church cookbook and my family loves for me to make this cake. This icing is da bomb!!! I made this cake for Mildred's family when she died because she had submitted the recipe. They were speechless and so appreciative. I'm so glad I thought about doing that for them.

Ingredients

  • 1 stick butter
  • 1 cup packed brown sugar
  • 1/3 cup milk
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons vanilla extract
  • 16 ounces powdered sugar
  • - cake mix, your flavor choice

How To Make mildred's caramel icing & cake

  • I used dark brown sugar with this batch. Either light or dark works well.
    Step 1
    *Bake your cake layers. Slowly bring first 4 ingredients to a boil in a medium-sized saucepan, stirring occasionally.
  • Step 2
    Set saucepan off burner & add vanilla. Slowly stir in powdered sugar. Beat vigorously, cover & let this set while layers are cooling. Most of the time I use an electric mixer unless I sift my powdered sugar. I leave it on the stove but not on the burner I cooked it on. I highly recommend sifting the powdered sugar (measure then sift).
  • Step 3
    *IMPORTANT: Ice the cake once the layers are cooled but the icing is still warm but not hot. Slowly add more milk (a little at the time) if the icing is too stiff. This icing sets up quickly. I like for it to drizzle down the sides of cake.
  • I especially love this icing on chocolate layers. I made two layers, froze one and iced one. YUMMM-O!!!
    Step 4
