caramel apple pudding cake

I got this recipe from a newspaper one time and the paper is yellow so you can guess how old it is. Its really a good cake and takes only a few minutes to put it together.

Ingredients

  • 2 cups granny smith apples, thinly sliced
  • 3 tablespoons lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 cup raisins
  • 1 cup all purpose flour
  • 3/4 cup brown sugar, firmly packed
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans
  • 3/4 cup caramel ice cream topping
  • 1/2 cup water
  • 1 tablespoon butter

How To Make caramel apple pudding cake

  • Step 1
    Grease a 2 quart square baking dish. Arrange apple slices in the bottom of dish: Sprinkle with lemon juice, cinnamon, and nutmeg. Top evenly with raisins. In a large bowl, combine flour, brown sugar, baking powder, and baking soda. Add milk, 2 tablespoons melted butter and vanilla; mix well. Stir in pecans. Spread batter evenly over the apple mixture. In a small saucepan, combine the caramel topping, water, and 1 tablespoon butter, Bring to a boil. Pour mixture over batter. Bake at 350 degrees for 35 minutes or until center is set. Serve warm, with ice cream if desired.
