caramel apple pudding cake

I love apple cakes, apple pies, and apple crisps, so when I saw this recipe I had to try it. Cannot remember where I copied it from but I love it. Have had this recipe in my collection for years.

- 2 cups peeled, thinly sliced granny smith apples
- 3 tablespoons lemon juice
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 cup self rising flour
- 3/4 cup brown sugar, packed
- 1/2 cup milk
- 2 tablespoons butter, melted
- 1 teaspoon vanilla
- 1/2 cup chopped walnuts
- 3/4 can caramel ice cream topping
- 1/2 cup water
- 1 tablespoon butter or margarine
- - vanilla ice cream for serving
How To Make caramel apple pudding cake

Step 1Grease a 11" by 7" or 2 quart square baking pan. Arrange apple slices in bottom of dish. Sprinkle with lemon juice, cinnamon, and nutmeg.

Step 2In a large bowl combine flour, the 2 tablespoons melted butter, brown sugar, milk, and vanilla. Stir in walnuts. Spread the batter evenly over the apples.

Step 3In a small saucepan combine the caramel topping, water, and the one tablespoon of butter. Bring to boiling. Pour over batter. Bake in a 350 degree oven for 35 minutes. While warm, spoon cake, apples, and caramel mixture into bowls. Serve with Vanilla Ice Cream.
