1 1/2 cvegetable oil

2 tspvanilla extract

3 call purpose flour

1 1/2 tspapple pie spice

1 tspsalt

1 tspbaking soda

2 mediumapples, peeled and finely chopped

CARAMEL GLAZE:
-
1/2 cbutter or margarine
-
1/2 cbrown sugar, firmly packed
-
2 tspmilk
How to Make Caramel Apple Pound Cake
- heat oven to 350. grease and flour 12 cup fluted tube cake pan.
- in a large bowl, beat sugar, oil, vanilla and eggs with electric mixer on medium speed until light and fluffy.
- beat in flour, salt and baking soda until smooth. stir in apples. pour into pan.
- bake for 1 hour to 1 hour and 20 minutes or until toothpick inserted in center comes out clean. cool 20 minutes. remove from pan to cooling rack.
- in a 2 quart saucepan, heat all glaze ingredients to boiling, stirring occasionally. boil 2 minutes, stirring constantly, remove from heat. spoon glaze over warm cake.
