all-purpose flour
1/2 c
firmly packed brown sugar
1/4 tsp
1/2 tsp
1 c
(2 sticks) butter, softened


granny smith apples, peeled, cored and finely chopped
1 Tbsp
white sugar
1 Tbsp
brown sugar, packed
1/2 tsp
ground cinnamon
1/4 tsp
ground nutmeg


16 oz
packages cream cheese, softened
1/2 c
white sugar
2 large
1 tsp
vanilla extract


1 c
firmly packed light brown sugar
1 c
all-purpose flour
1/2 tsp
1/2 c
quick cooking oats
1/2 c
(1 stick) butter, softened
caramel ice cream topping

How to Make Caramel Apple Cheesecake bars


  • 1Preheat oven to 350.
  • 2In medium bowl combine, flour, brown sugar,salt and cinnamon. Cut in the butter until the mixture is crumbly and well combined.
  • 3Press the mixture into a well greased 9x13 baking pan.
  • 4Bake 10 minutes or until lightly browned.
  • 5Place diced apples into a bowl and toss with sugars, cinnamon and nutmeg. Set aside.
  • 6In a medium bowl,cream together cream cheese and sugar. Beat in the eggs until creamy and combined.
  • 7Spread cream cheese mixture over the crust and top with the apples
  • 8Make streusel mixture by combining all the streusel ingredients until crumbly.
  • 9Sprinkle the streusel mixture over the apples.
  • 10Bake for 30-40 minutes until cheesecake layer is done.(test for doneness with tooth pick (it will come out clean of cream cheese))
  • 11Remove from oven and let cool.
  • 12When cooled completely drizzle on the caramel topping.
  • 13These are ready to eat when they come out of the oven, but I prefer to refrigerate them for at least 3 hours to give the cheesecake layer time to set.
