caramel apple cake
I came up with this recipe because I only had a yellow cake mix in the house and thought that was boring. This is definitely not boring

Ingredients
- 1 box yellow cake mix
- 1 1/4 cups water
- 3 - eggs
- 1/3 cup oil
- 2 teaspoons cinnamon (i like mccormicks roasted cinnamon)
- 1 teaspoon nutmeg
- 2 large apples, chopped very fine
- 1 cup chopped pecans
- 1/3 cup butter, not margerine
- 1/3 cup brown sugar
- 1 teaspoon vanilla extract
- - powdered sugar
- - whole milk or half and half
How To Make caramel apple cake

Step 1Mix together the first 6 ingredients, beat for 2 minutes on medieum to high speed. Fold in the apples and 1/2 cup of the pecans. Pour into well greased bundt pan. Bake for 45-50 minutes (I go by the amount of time for a bundt cake on the cake mix box).

Step 2For topping: in sauce pan melt together the butter and the brown sugar until sugar is desolved. Add in the vanilla. Add in enough powdered sugar to make a frosting consistancy, then add in enough milk to make it thin enough to drizzle on the cake. Add in 1/2 cup pecans. Drizzle over the cooled cake.
