caramel apple cake

I came up with this recipe because I only had a yellow cake mix in the house and thought that was boring. This is definitely not boring

Ingredients

  • 1 box yellow cake mix
  • 1 1/4 cups water
  • 3 - eggs
  • 1/3 cup oil
  • 2 teaspoons cinnamon (i like mccormicks roasted cinnamon)
  • 1 teaspoon nutmeg
  • 2 large apples, chopped very fine
  • 1 cup chopped pecans
  • 1/3 cup butter, not margerine
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla extract
  • - powdered sugar
  • - whole milk or half and half

How To Make caramel apple cake

  • Step 1
    Mix together the first 6 ingredients, beat for 2 minutes on medieum to high speed. Fold in the apples and 1/2 cup of the pecans. Pour into well greased bundt pan. Bake for 45-50 minutes (I go by the amount of time for a bundt cake on the cake mix box).
  • Step 2
    For topping: in sauce pan melt together the butter and the brown sugar until sugar is desolved. Add in the vanilla. Add in enough powdered sugar to make a frosting consistancy, then add in enough milk to make it thin enough to drizzle on the cake. Add in 1/2 cup pecans. Drizzle over the cooled cake.
