~ car-rai-ban-nut spiced delight cake ~
This cake has a lot to love, a little bit of something for everyone. Somewhat healthy too as it contains, fruit, nuts, vegetable and grain...on the lines of a carrot cake, but healthier. I added a creamy cream cheese frosting. Serve with or without, it's delicious either way. It's one of those cakes that gets better by the day. Enjoy!

Ingredients
- 1 cup smashed ripe bananas
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 - eggs
- 1 1/2 cups flour
- 1 teaspoon ground allspice
- 3 teaspoons cinnamon
- 1/2 teaspoon each - ground cloves & ground nutmeg
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 cup oatmeal, uncooked
- 1 cup each - raisins - shredded carrots & chopped nuts
- FROSTING
- 1 - 8 ounces softened cream cheese
- 1/4 cup softened butter
- 1 teaspoon vanilla extract
- 2 cups confectioners' sugar
How To Make ~ car-rai-ban-nut spiced delight cake ~

Step 1Preheat oven to 350 degree F. Spray a 9 x 13 baking pan or dish with nonstick cooking spray. ( I use Bakers Joy ). In a large bowl, beat together the sugar, banana and oil. Whisk in eggs. Mix in raisins, nuts, oatmeal and carrots.

Step 2Sift together the flour, baking powder, baking soda and spices.

Step 3Beat the dry ingredients with the wet. ( I just used a spatula ) Spread batter into prepared pan.

Step 4Bake for roughly 40 minutes or until pick comes out clean. Don't over bake!

Step 5Remove from oven to cool. Make frosting.

Step 6In a medium bowl, whip together the butter and cream cheese. Beat in vanilla. Next, add sugar until all is beat in and smooth.

Step 7Frost cooled cake and enjoy!
