cappuccino muffins
This was an orphaned recipe that I adopted. I just had to try it and, yes, it is good. Many thanks to the person who posted this for me to find!

Ingredients
- 3/4 cup cake flour
- 1 1/4 cups all purpose flour
- 1/2 cup cocoa powder
- 1/4 cup brown sugar
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1 tablespoon instant coffee, decaffinated
- 1/2 teaspoon salt
- 6 tablespoons butter, softened
- 1 cup sour cream
- 1 cup half and half
- 2 - eggs
- 6 ounces chocolate, bittersweet and finely chopped
How To Make cappuccino muffins

Step 1Preheat oven to 350 degrees. Fill 12 large muffin cups with paper liners. Set pan aside. Stir together flours, cocoa powder, sugars, baking powder and instant coffee powder. In another bowl, beat butter, half and half, sour cream and eggs until smooth.

Step 2Fold dry ingredients and chocolate into egg cream mixture; mix lightly until just moistened. Fill prepared muffin cups 2/3 full; bake at 350 degrees until tops are firm, about 15 minutes.
