I received this recipe about 30 years ago from a friend and it never fails to please. Once you try it, you truly can't get enough. It is a very thick batter and has to be mixed by hand and the amount of oil sounds like a lot but that's what the original recipe called for and the cake always turns out great.

Ingredients For can't get enough apple pound cake

  • 2 c
    granulated sugar
  • 3 c
    plain flour
  • 1 tsp
    vanilla flavoring
  • 1 tsp
    salt
  • 3 lg
    granny smith apples diced (unpeeled)
  • 1 1/2 c
    cooking oil
  • 4 md
    eggs
  • 1 tsp
    baking powder
  • 1 c
    chopped pecans
  • 1 stick
    butter
  • 1/2 c
    brown sugar packed
  • 2 Tbsp
    milk

How To Make can't get enough apple pound cake

    Mix together by hand, first 9 ingredients. Pour mixture into greased and floured bunt pan or two loaf pans. Bake at 350 degrees 1 hour 20 minutes.

    Glaze: Melt butter in small sauce pan. Add brown sugar stirring until melted, bring to boil for 1 minute. Remove from heat and stir in milk. Pour over hot cake.
