Ingredients
- 1 package (1 lb. 1 oz.) pound cake mix
- 2 - eggs
- 3/4 cup sour cream
- 1 can (1 lb. 13 oz.) apricot halves, drained
- TOPPING:
- 1/2 cup softened butter
- 1/4 teaspoon salt
- 1 cup sugar
- 1 1/2 cups ground almonds
- 1 teaspoon pure almond extract

Step 1Prepare cake mix with eggs as the label directs, but substitute sour cream for the milk.

Step 2Turn batter into a greased and floured 9 x 13 pan. For topping, use a pastry blender or mixer and combine the butter, salt, sugar, almonds and almond extract until moist and crumbly. Set aside.

Step 3Drain the apricots well and chop coarsely. Top the batter with the apricots and sprinkle with the crumbly mixture.

Step 4Bake at 350 for 45 minutes or until cake tests done. Cool and cut into squares. Serve slightly warm if you wish.
