(1 lb. 1 oz.) pound cake mix
3/4 c
sour cream
1 can(s)
(1 lb. 13 oz.) apricot halves, drained


1/2 c
softened butter
1/4 tsp
1 c
1 1/2 c
ground almonds
1 tsp
pure almond extract

How to Make California Cake


  • 1Prepare cake mix with eggs as the label directs, but substitute sour cream for the milk.
  • 2Turn batter into a greased and floured 9 x 13 pan.

    For topping, use a pastry blender or mixer and combine the butter, salt, sugar, almonds and almond extract until moist and crumbly. Set aside.
  • 3Drain the apricots well and chop coarsely. Top the batter with the apricots and sprinkle with the crumbly mixture.
  • 4Bake at 350 for 45 minutes or until cake tests done. Cool and cut into squares. Serve slightly warm if you wish.
