cake mix

Ingredients

• 2 1/3 cups unbleached all purpose flour or cake flour
• 1 tablespoon baking powder
• 3/4 teaspoon salt
• 1 cup sugar ( i use evaporated cane crystals)
• 1/2 cup oil or melted butter
• 3 large eggs
• 1 1/2 cups milk
• 1-2 teaspoon vanilla
• - optional: add 1 pkg pudding mix + 1 lge egg
• YELLOW CAKE:
• - make as is
• WHITE CAKE:
• - use 4 egg whites instead of the 3 eggs
• CHOCOLATE CAKE:
• 1/2 cup cocoa (add to dry ingredients before adding the milk)
• SPICE CAKE:
• 1 teaspoon cinnamon
• 1/4 teaspoon cloves
• 1/4 teaspoon allspice ( add all of these to dry ingredients)
• LEMON CAKE:
• 1/2 cup lemon juice in place of 1/2 cup of the milk
• 1-2 teaspoon lemon extract in place of the vanilla
• - opt- lemon zest & yellow food coloring
