great, very moist cake. potluck fav. hope u like it. I will post two versions, one uses cake mix other is scratch.

Ingredients
- 2 cups plain flour
- 1 1/2 cups sugar
- 1 1/2 teaspoons baking soda
- 2 - eggs
- 1 can 20 ounces crushed pineapple, with juice
- pinch - salt
How To Make cajun cake

Step 1Mix all ingredients and beat by hand for 1 minute.

Step 2Bake in 9x13 pan at 350 for 45 to 50 minutes, or until done when touched in center.

Step 3While cake is baking make icing.

Step 41 stick butter 1 small can evaporated milk 1 cup sugar 1 cup coconut 1 tsp vanilla 1 cup chopped pecans boil all but coconut for around 5 minutes, add coconut.

Step 5While cake is hot, poke holes with wooden spoon handle. Pour icing over cake.
