great, very moist cake. potluck fav. hope u like it. I will post two versions, one uses cake mix other is scratch.

Ingredients

Add to Grocery List

  • 2 c
    plain flour
  • 1 1/2 c
    sugar
  • 1 1/2 tsp
    baking soda
  • 2
    eggs
  • 1 can(s)
    20 ounces crushed pineapple, with juice
  • pinch
    salt

How to Make Cajun Cake

Step-by-Step

  1. Mix all ingredients and beat by hand for 1 minute.
  2. Bake in 9x13 pan at 350 for 45 to 50 minutes, or until done when touched in center.
  3. While cake is baking make icing.
  4. 1 stick butter
    1 small can evaporated milk
    1 cup sugar
    1 cup coconut
    1 tsp vanilla
    1 cup chopped pecans
    boil all but coconut for around 5 minutes, add coconut.
  5. While cake is hot, poke holes with wooden spoon handle. Pour icing over cake.
