Ingredients

  • FILLING:

  • 1 pkg
    12oz butterscotch chips ( get the good ones)
  • 2 pkg
    3oz each cream cheese, softned
  • 2 Tbsp
    milk
  • CAKE:

  • 3 c
    all purpose flour
  • 3/4 c
    sugar
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1 c
    butter, softned
  • 2
    eggs, slightly beaten
  • 1 c
    buttermilk
  • 1 tsp
    vanilla extract
  • CRUMB TOPPING:

  • 1/2 c
    all purpose flour
  • 1/2 c
    sugar
  • 1/4 c
    butter
  • 1/2 c
    chopped pecans

How to Make Butterscotch Coffee Cake

Step-by-Step

  1. Melt morsels over hot (not boiling) water (or in the microwave); cool. Combine cream cheese and milk. Stir in morsels; set aside.
  2. Combine flour, sugar, baking soda, and baking powder. Cut in butter until mixture resembles fine crumbs. Combine eggs, buttermilk and vanilla; stir into flour mixture just to moisten. Spread HALF the batter into a greased 9x13. Spread with morsel mixture. Spoon remaining batter over the top.
  3. Sprinkle with crumb topping. Bake at 350 degrees for 40-45 minutes. Topping: Combine flour and sugar; cut in butter until mixture resembles fine crumbs. stir in pecans.
