Ingredients

  • FILLING:
  • 1 package 12oz butterscotch chips ( get the good ones)
  • 2 packages 3oz each cream cheese, softned
  • 2 tablespoons milk
  • CAKE:
  • 3 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup butter, softned
  • 2 - eggs, slightly beaten
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • CRUMB TOPPING:
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup butter
  • 1/2 cup chopped pecans

How To Make butterscotch coffee cake

  • Step 1
    Melt morsels over hot (not boiling) water (or in the microwave); cool. Combine cream cheese and milk. Stir in morsels; set aside.
  • Step 2
    Combine flour, sugar, baking soda, and baking powder. Cut in butter until mixture resembles fine crumbs. Combine eggs, buttermilk and vanilla; stir into flour mixture just to moisten. Spread HALF the batter into a greased 9x13. Spread with morsel mixture. Spoon remaining batter over the top.
  • Step 3
    Sprinkle with crumb topping. Bake at 350 degrees for 40-45 minutes. Topping: Combine flour and sugar; cut in butter until mixture resembles fine crumbs. stir in pecans.
