My mother LOVED pound cakes. Momma had Crohns disease and when she didn't feel well, sometimes pound cake was the only thing that she could eat. She has been gone almost 5 years but I still think of her everytime I make this pound cake.

Ingredients

  • 1/2 cup margarine, softened
  • 1/2 cup vegetable shortening
  • 2 cups sugar
  • 4 - eggs
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 2 cups plain flour
  • 1/8 teaspoon salt
  • 2 teaspoons lemon extract
  • 1 teaspoon almond extract

How To Make buttermilk pound cake

  • Step 1
    Cream margarine and shortening; add sugar and mix well. Add eggs, one at a time, beating after each egg. Dissolve soda in buttermilk. Combine all dry ingredients. Add alternately with buttermilk to creame mixture. Stir in flavorings. Pour into a greased and flowered tube pan. Bake 350 degrees for 1 hour and 5 minutes. Cool in pan for 10 minutes.
