buttercream filling for a "hoho cake"

This recipe makes enough for a 3-layer cake or 2 2-layer cakes. Can be halved for one 2-layer cake. Really good if you melt chocolate chips and butter and drizzle over the top of the cake to make a HOHO cake.

Ingredients

  • 2 tablespoons cornstarch
  • 1 cup milk
  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 1/3 teaspoons pure vanilla extract
  • 1 - chocolate cake

How To Make buttercream filling for a "hoho cake"

  • Step 1
    Bake your favorite chocolate cake according to recipe or directions for a mix. (I use Duncan Hines Dark Chocolate Fudge.)
  • Step 2
    Gradually whisk milk and cornstarch together in small saucepan until smooth. Cook over med/low heat whisking constantly until mixture thickens and boils. Place saucepan in large bowl of ice water, stirring occasionally, until mixture cools.
  • Step 3
    Beat butter and shortening until creamy. Beat in sugar until light and fluffy. Add cooled cornstarch mixture and vanilla and beat until creamy.
  • Step 4
    Spread filling between layers of chocolate cake and refrigerate 30 minutes to set the filling. Frost as desired (I make a chocolate ganache.)
