When I moved across the country, the first thing my mom did was sit down and put together a cookbook for me of family favorite recipes. This cake recipe was included in it. It is so simple and delicious, almost as easy as making a cake from a box, but with that happy satisfaction that you made it yourself. Ingredients

  • 1/3 cup shortening
  • 3/4 cup white sugar
  • 1 - egg
  • 1 1/2 teaspoons vanilla
  • 1 3/4 cups self rising flour
  • 3/4 cup milk
  • 1/2 cup blueberries (optional)
  • - if you do use the berries, add another 1-2 tbsp milk

How To Make busy day cake

  • Step 1
    Preheat oven to 375 degrees. Place shortening in a mixing bowl and add sugar, egg and vanilla, mix until moistened.
  • Step 2
    Gradually add flour and milk at the same time. If desired, add the extra milk and blueberries as well. Mix until well incorporated.
  • Step 3
    Bake in a greased 9x9x2 baking pan for about 25 minutes.
  • Step 4
    This cake is yummy on its own. We would typically have it with whipped cream and berries.
  • Step 5
    If you do not have self rising flour, you can make your own, just sift together flour with 1 tsp baking powder per 1 cup of flour.
