When I moved across the country, the first thing my mom did was sit down and put together a cookbook for me of family favorite recipes. This cake recipe was included in it.

It is so simple and delicious, almost as easy as making a cake from a box, but with that happy satisfaction that you made it yourself.

1/3 c
3/4 c
white sugar
1 1/2 tsp
1 3/4 c
self rising flour
3/4 c
1/2 c
blueberries (optional)
if you do use the berries, add another 1-2 tbsp milk

How to Make Busy Day Cake


  • 1Preheat oven to 375 degrees.

    Place shortening in a mixing bowl and add sugar, egg and vanilla, mix until moistened.
  • 2Gradually add flour and milk at the same time. If desired, add the extra milk and blueberries as well. Mix until well incorporated.
  • 3Bake in a greased 9x9x2 baking pan for about 25 minutes.
  • 4This cake is yummy on its own. We would typically have it with whipped cream and berries.
  • 5If you do not have self rising flour, you can make your own, just sift together flour with 1 tsp baking powder per 1 cup of flour.
