Bite size brownies that are like a cake. My grandkids make these too.

Ingredients

  • 2 tablespoons instant coffee
  • 1/4 cup warm water
  • 1 18.4 ou bags brownie mix
  • 2 - eggs
  • 1/2 cup oil
  • 1 cup butter
  • 3 cups confectioners' sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup caramel topping

How To Make brownie cupcakes

  • Step 1
    Heat oven to 350 degrees. Grease 12 cupcake cups in a cupcake tin. Dissolve coffe granules in water. Add brownie mix, eggs and oil.
  • Step 2
    Beat 2 minutes on medium speed. Divide among cupcake cups. Bake 22-25 minutes till knife inserted comes out clean.
  • Step 3
    Cool. Beat butter until smooth. On low speed gradually beat in sugar. Add milk and vanilla beat till fluffy. Srizzle over cupcakes. Optional- drizzle caramel topping.
