How to Make Boston Cream Pie

Step-by-Step

  1. Heat oven 350 Grease and flour 9inch round baking pan.
  2. In large mixer bowl, beat shortening, sugar, eggs and vanilla until light and fluffy. ( This will take a little while I put mine on my electric mixer and let it go while I got other ingredients together)
  3. Stir in flour, baking powder and salt;add alternately with milk to shortening mixture.
  4. Pour into your prepared pan Bake 30-35 minutes or until wooden toothpick inserted in center comes out clean.
  5. Cool 10 minutes, remove from pan to wire rack. Cool completely. Prepare Filling (see below)
  6. With long serrated knife, cut cake horizontally into two even layers. Place on layer on serving plate, cut side up, spread filling over layer. Top with remaining cake layer, cut side down. Prepare Dark Cocoa Glaze.(see below)
  7. Pour Glaze onto top of cake, allowing some to drizzle down sides. Refrigerate before serving. Refrigerate leftovers.
  8. RICH FILLING: In medium saucepan, stir together sugar and cornstarch, gradually add milk and egg yolks, stirring until blended. Cook over medium beat, stirring constantly, until mixture boils. Boil and stir 1 minute. Remove from heat, stir in butter and vanilla. Cover, refrigerate several hours until cold.
  9. DARK COCOA GLAZE: In small saucepan, heat water and butter in full boil; remove from heat. Immediately stir in cocoa. Gradually add powdered sugar and vanilla, beating with whisk until smooth;cool slightly.
  10. TIP... This is an easy recipe a little time consuming..I make the cake and filling the night before. I did not slice cake till in the morning and after filling set up in refrigerator I mixed it up with a whisk. IN the morning I simply sliced my cake and spread on filling and then made up the Dark Cocoa Glaze. So simple =) ENJOY
