I was just brainstorming one day, thinking of what i can make with leftover bananas in a 8x8 glass pan and no mixer. I cobbled this together from my handy-dandy Joy of Cooking. And i love baking with booze

  • 1 1/2 c
    ap flour
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
  • 2/3 c
    brown sugar, firmly packed
  • 1/3 c
  • 2
  • 2-3
    mashed ripe bananas
  • 1/2 c
    booze soaked raisins (i used whiskey since thats what i had)

  • 1/3 c
    brown sugar, firmly packed
  • 2 Tbsp
    ap flour
  • 2 Tbsp
    butter, softened

  • 1/2 c
    brown sugar
  • 1/4 c
  • 1/2 stick
  • 1/4 c

How to Make Boozy Banana Coffee Cake


  1. Preheat oven to 350, grease the bottom and sides of a 8x8 glass baking dish
  2. Make BATTER
  3. wisk dry ingredients together
  4. cream together shortning and sugar
  5. beat 2 eggs into sugar mix
  6. slowly mix dry ingedients into wet, in 2 batches
  7. add mashed bananas, mix til blended
  8. fold in rasins
  9. Make CRUMBLE
  10. mix crumble ingredients til well blended and crumbly
  11. Pour 1/2 - 2/3 of the batter into well greased pan
  12. sprinkle with brown sugar crumbles
  13. evenly spread remaining batter over crumble layer
  14. Make GLAZE
  15. in small saucepan on low heat, mix glaze ingredients
  16. Bring to low boil
  17. gently pour glaze over the cake before baking
  18. Bake at 350 for about 30-35 min, or til toothpick comes out clean near the center of the pan
  19. *omit this step if desired* poke holes in the cake with a toothpick, drizzle some booze over cake while still warm
  20. allow cake to cool completely before serving
