I was just brainstorming one day, thinking of what i can make with leftover bananas in a 8x8 glass pan and no mixer. I cobbled this together from my handy-dandy Joy of Cooking. And i love baking with booze

Ingredients
- CAKE BATTER
- 1 1/2 cups ap flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup brown sugar, firmly packed
- 1/3 cup shortning
- 2 - eggs
- 2-3 - mashed ripe bananas
- 1/2 cup booze soaked raisins (i used whiskey since thats what i had)
- CRUMBLE
- 1/3 cup brown sugar, firmly packed
- 2 tablespoons ap flour
- 2 tablespoons butter, softened
- GLAZE
- 1/2 cup brown sugar
- 1/4 cup milk
- 1/2 stick butter
- 1/4 cup honey
How To Make boozy banana coffee cake

Step 1Preheat oven to 350, grease the bottom and sides of a 8x8 glass baking dish

Step 2Make BATTER

Step 3wisk dry ingredients together

Step 4cream together shortning and sugar

Step 5beat 2 eggs into sugar mix

Step 6slowly mix dry ingedients into wet, in 2 batches

Step 7add mashed bananas, mix til blended

Step 8fold in rasins

Step 9Make CRUMBLE

Step 10mix crumble ingredients til well blended and crumbly

Step 11Pour 1/2 - 2/3 of the batter into well greased pan

Step 12sprinkle with brown sugar crumbles

Step 13evenly spread remaining batter over crumble layer

Step 14Make GLAZE

Step 15in small saucepan on low heat, mix glaze ingredients

Step 16Bring to low boil

Step 17gently pour glaze over the cake before baking

Step 18Bake at 350 for about 30-35 min, or til toothpick comes out clean near the center of the pan

Step 19*omit this step if desired* poke holes in the cake with a toothpick, drizzle some booze over cake while still warm

Step 20allow cake to cool completely before serving
