A delicious cake that I serve for breakfast, but is impressive enough to serve anytime. I combined 2 different recipes of mine to create this one. It's awesome!

Ingredients

  • 2 3/4 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 cup buttermilk
  • 3 - eggs,slightly beaten
  • 1 cup melted, butter
  • 1 tablespoon vanilla extract
  • 3 cups blueberries, fresh or frozen, thawed
  • CRUMBLE
  • 1 stick butter, cubed
  • 1/4 cup flour
  • 1/2 cup sugar
  • 2 teaspoons cinnamon

How To Make ~ bodacious blueberry buttermilk breakfast cake ~

  • Step 1
    Preheat oven to 350 degree F. Spray a 9 x 13 baking dish. I use bakers secret In a medium bowl, sift dry ingredients and set aside. In a large bowl, beat together the milk, melted butter, vanilla and eggs. Add the flour mixture into the wet, just until blended.
  • Step 2
    Spread batter into prepared pan. Sprinkle the top evenly with the blueberries.
  • Step 3
    In a food processor, process the crumb mixture until crumbly.
  • Step 4
    Sprinkle crumb mixture evenly over cake and bake for 50 minutes or until pick comes out clean.
  • Step 5
    Cool completely or serve warm with maybe a scoop of ice cream.
