These Blueberry muffins do not last long in my house. My family eat them the same day they are made! Very easy and very tasty!

Ingredients

  • 1/4 c
    firmly packed brown sugar
  • 3 Tbsp
    all purpose flour divided
  • 3 Tbsp
    butter cut into pieces
  • 1/4 c
    uncooked regular oats
  • 2 c
    all purpose flour
  • 1/2 c
    granulated sugar
  • 2 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1/2 tsp
    salt
  • 3/4 c
    buttermilk
  • 1/3 c
    oil
  • 1
    large egg
  • 1 1/2 c
    blueberries

How to Make Blueberry-Streusel Muffins

Step-by-Step

  1. Pulse brown sugar, 2tablespoons flour, and butter 4 or 5 times into a food processor. Stir in otas : set aside
  2. Combine 2 cups flour and next 5 ingredients in a large bowl: make a well in the center of mixture.
  3. Whisk together buttermilk, oil, and egg: add to flour mixture, stirring just until moistened.
  4. Toss blueberries with remaining 1 tablespoon flour , and gently fold into batter.
  5. Spoon batter into paper-lined muffin pans , filling three - fourths full: sprinkle batter evenly with crumble topping, gently pressing into batter.
  6. Bake at 400 degrees for 20 minutes or until lightly browned. Remove and cool
