These Blueberry muffins do not last long in my house. My family eat them the same day they are made! Very easy and very tasty!

Ingredients

  • 1/4 cup firmly packed brown sugar
  • 3 tablespoons all purpose flour divided
  • 3 tablespoons butter cut into pieces
  • 1/4 cup uncooked regular oats
  • 2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1/3 cup oil
  • 1 - large egg
  • 1 1/2 cups blueberries

How To Make blueberry-streusel muffins

  • Step 1
    Pulse brown sugar, 2tablespoons flour, and butter 4 or 5 times into a food processor. Stir in otas : set aside
  • Step 2
    Combine 2 cups flour and next 5 ingredients in a large bowl: make a well in the center of mixture.
  • Step 3
    Whisk together buttermilk, oil, and egg: add to flour mixture, stirring just until moistened.
  • Step 4
    Toss blueberries with remaining 1 tablespoon flour , and gently fold into batter.
  • Step 5
    Spoon batter into paper-lined muffin pans , filling three - fourths full: sprinkle batter evenly with crumble topping, gently pressing into batter.
  • Step 6
    Bake at 400 degrees for 20 minutes or until lightly browned. Remove and cool
