Ingredients

  • 1/4 cup butter
  • 1 cup sugar
  • 1 - egg, separated
  • 1 cup milk
  • 1/2 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 pint blueberries, or whatever berry you prefer

How To Make blueberry loaf cake

  • Step 1
    Beat butter and sugar until creamy. Add beaten egg yolk. Sift flour and baking powder. Add milk and sifted dry ingredients alternately. Stir in vanilla, then blueberries.
  • Step 2
    Beat eggs whites until stiff. Gently fold in egg whites.
  • Step 3
    Spread in a prepared loaf pan. Bake at 375 until cake tests done. Depends on size of pan, usually around 30-40 mins.
  • Step 4
    Cool slightly and remove cake from pan. Brush with butter and sprinkle with a little sugar. This is so good sliced and toasted and made into french toast.
