blueberry gingerbread

This is one of my family' s favorite desserts. My late mother would make it when the blueberries were in season. It is best served with whipped topping on it.

Ingredients For blueberry gingerbread

1/2 cshortening

1 cbrown sugar

2eggs, well beaten

1/2 cmolasses

1/2 tspsalt
-
1/2 tspcinnamonn

1/2 tspnutmeg

1/2 tspginger
-
1 tspbaking powder
-
2 cflour
-
2/3 cboiling water
-
1 tspbaking soda
-
1 cblueberries, rinsed off

3 Tbspflour
How To Make blueberry gingerbread

1in a large bowl, cream together the shortening and brown sugar

2add the molasses, salt, nutmeg and cinnamon, and mix well
-
3in a measuring cup, pour boiling water over 1 level teaspoon of baking soda and add to the first mixture
-
4in another bowl, sift together flour, baking powder and ginger using a wire whisk
-
5add flour mixture to the first mixture and then the eggs, that were well beaten
-
6beat all well
-
7add 1 cup of blueberries floured with 3 tablespoonfuls of flour to mixture
-
8fold in gently
-
9grease pan then line with waxed paper and grease well

10pour the blueberry mixture into the prepared pan

11bake at 350 degrees for 40 to 50 minutes

12cool on wire rack
