blueberry gingerbread
This is one of my family' s favorite desserts. My late mother would make it when the blueberries were in season. It is best served with whipped topping on it.

Ingredients
- 1/2 cup shortening
- 1 cup brown sugar
- 2 eggs, well beaten
- 1/2 cup molasses
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamonn
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1 teaspoon baking powder
- 2 cups flour
- 2/3 cup boiling water
- 1 teaspoon baking soda
- 1 cup blueberries, rinsed off
- 3 tablespoons flour
How To Make blueberry gingerbread

Step 1in a large bowl, cream together the shortening and brown sugar

Step 2add the molasses, salt, nutmeg and cinnamon, and mix well

Step 3in a measuring cup, pour boiling water over 1 level teaspoon of baking soda and add to the first mixture

Step 4in another bowl, sift together flour, baking powder and ginger using a wire whisk

Step 5add flour mixture to the first mixture and then the eggs, that were well beaten

Step 6beat all well

Step 7add 1 cup of blueberries floured with 3 tablespoonfuls of flour to mixture

Step 8fold in gently

Step 9grease pan then line with waxed paper and grease well

Step 10pour the blueberry mixture into the prepared pan

Step 11bake at 350 degrees for 40 to 50 minutes

Step 12cool on wire rack
