blueberry gingerbread

This is one of my family' s favorite desserts. My late mother would make it when the blueberries were in season. It is best served with whipped topping on it.

Ingredients

  • 1/2 cup shortening
  • 1 cup brown sugar
  • 2 eggs, well beaten
  • 1/2 cup molasses
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamonn
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 teaspoon baking powder
  • 2 cups flour
  • 2/3 cup boiling water
  • 1 teaspoon baking soda
  • 1 cup blueberries, rinsed off
  • 3 tablespoons flour

How To Make blueberry gingerbread

  • Step 1
    in a large bowl, cream together the shortening and brown sugar
  • Step 2
    add the molasses, salt, nutmeg and cinnamon, and mix well
  • Step 3
    in a measuring cup, pour boiling water over 1 level teaspoon of baking soda and add to the first mixture
  • Step 4
    in another bowl, sift together flour, baking powder and ginger using a wire whisk
  • Step 5
    add flour mixture to the first mixture and then the eggs, that were well beaten
  • Step 6
    beat all well
  • Step 7
    add 1 cup of blueberries floured with 3 tablespoonfuls of flour to mixture
  • Step 8
    fold in gently
  • Step 9
    grease pan then line with waxed paper and grease well
  • Step 10
    pour the blueberry mixture into the prepared pan
  • Step 11
    bake at 350 degrees for 40 to 50 minutes
  • Step 12
    cool on wire rack
