blueberry coffee cake

Very good friend gave me this recipe. It continues to be passed on. I have even baked it and taken it home to Pennsylvania on the plane from Nebraska where I lived at the time. Of course that was before the pat down and 9/11 security screenings we have today.

Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup oil
  • 1 cup milk
  • 2 - eggs
  • 1/2 cup butter
  • 1/2 teaspoon vanilla
  • 4 cups flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 4 cups fresh or frozen blueberries
  • 1 cup sugar
  • 1 cup flour
  • 1/2 cup butter
  • 1/2-1 cup chopped pecans
  • 1 teaspoon cinnamon

How To Make blueberry coffee cake

  • Step 1
    Mix first six ingredients well. Mix dry ingredients (next three ingredients). Add to first six ingredients batter. Fold in blueberries. Mix together the last five ingredients with a pastry blender. Put batter mixture in 9 x 13 inch pan. Spread the last ingredients over the top of batter. Bake at 350 for 45 minutes to 1 hour. Note...fresh blueberries> 45 minutes....frozen blueberries> 1 hour or more. Watch closely.
