blueberry coffee cake
I'm trying to find recipes using Bisquick for a small cooking project for the Ronald McDonald House. This is one from a Bisquick cookbook that I adjusted a fair amount. Picture coming soon, as the cake is in the oven right now!

Ingredients
- 3 cups bisquick
- 3/4 cup sugar
- 1/4 cup vegetable oil
- 1 1/2 teaspoons vanilla
- 2 - eggs
- 1 cup sour cream or plain yogurt
- 1/4 cup lemon juice
- 1/2 cup applesauce
- 2 cups blueberries, fresh or frozen
How To Make blueberry coffee cake

Step 1Heat oven to 350. Generously grease and flour bundt cake pan.

Step 2Combine bisquick, sugar, oil, vanilla, eggs, sour cream, lemon juice and applesauce in large bowl. Add blueberries, stirring in gently.

Step 3Pour cake into prepared pan. Bake 50-55 minutes or until inserted toothpick comes out clean. Cool 15 minutes and then remove from pan. Cool completely.

Step 4Once cooled, drizzle with glaze of 1 cup powdered sugar, 4 tsp lemon juice, 1/2 tsp of vanilla OR just dust with powdered sugar.
