My husband made his spin on this classic dessert. We used frozen blueberries & it was delicious!

Ingredients

  • 3 c
    blueberries
  • 1/2 c
    + 3t + 3t sugar
  • 1/2 c
    orange juice (lime or lemon juice may be substituted)
  • 2/3 c
    flour
  • 1/4 tsp
    baking powder, heaped
  • 1 pinch
    salt
  • 1/2 c
    butter, room temperature
  • 1
    egg
  • 1/2 tsp
    vanilla extract
  • 1/2 tsp
    cinnamon (optional)
  • 1/2 tsp
    nutmeg (optional)
  • 1/4 tsp
    cloves, ground (optional)
  • 1/4 tsp
    mace (optional)

How to Make Blueberry Cobbler

Step-by-Step

  1. Preheat oven to 375F.
  2. In an 8” x 8” baking pan, spread blueberries. Drizzle orange juice over the top & sprinkle 3 Tbsp of sugar.
  3. Mix gently & briefly just to ensure juice & sugar are evenly distributed.
  4. In a small bowl mix thoroughly the flour, baking powder & salt, along with any combination of optional spices. Set aside.
  5. In a large bowl, cream the 1/2 cup sugar with the butter until light & fluffy. Incorporate the egg & vanilla.
  6. In batches, gradually add in flour mixture just until combined.
  7. Drop spoonfuls of the batter on top of the blueberries, covering as much as possible without actually spreading the batter.
  8. Sprinkle the remaining 3 Tbsp of sugar over the top to lend a little crisp to the cake layer.
  9. Bake for 35-40 minutes until cake is golden brown.
