My husband made his spin on this classic dessert. We used frozen blueberries & it was delicious!

Ingredients

  • 3 cups blueberries
  • 1/2 cup + 3t + 3t sugar
  • 1/2 cup orange juice (lime or lemon juice may be substituted)
  • 2/3 cup flour
  • 1/4 teaspoon baking powder, heaped
  • 1 pinch salt
  • 1/2 cup butter, room temperature
  • 1 - egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 teaspoon nutmeg (optional)
  • 1/4 teaspoon cloves, ground (optional)
  • 1/4 teaspoon mace (optional)

How To Make blueberry cobbler

  • Step 1
    Preheat oven to 375F.
  • Step 2
    In an 8” x 8” baking pan, spread blueberries. Drizzle orange juice over the top & sprinkle 3 Tbsp of sugar.
  • Step 3
    Mix gently & briefly just to ensure juice & sugar are evenly distributed.
  • Step 4
    In a small bowl mix thoroughly the flour, baking powder & salt, along with any combination of optional spices. Set aside.
  • Step 5
    In a large bowl, cream the 1/2 cup sugar with the butter until light & fluffy. Incorporate the egg & vanilla.
  • Step 6
    In batches, gradually add in flour mixture just until combined.
  • Step 7
    Drop spoonfuls of the batter on top of the blueberries, covering as much as possible without actually spreading the batter.
  • Step 8
    Sprinkle the remaining 3 Tbsp of sugar over the top to lend a little crisp to the cake layer.
  • Step 9
    Bake for 35-40 minutes until cake is golden brown.
