My husband fell in love with this recipe before we even tried it. Normally, nothing would stop him from doing it himself, but we ended up taking it to a party, and he had to work when it needed to be made. And it was EASY. Delicious and no trouble? Keeper!

  • 16 oz
    cream cheese, softened
  • 1/2 c
    sugar
  • 1/2 tsp
    vanilla
  • 2
    eggs
  • 1 c
    blueberries, divided
  • 1
    graham cracker pie crust (6oz or 9")

How to Make Blueberry Cheesecake

Step-by-Step

  1. Mix cream cheese, sugar, and vanilla at medium speed with electric mixer until well blended. Add eggs, mix until blended. Stir in 1/2 cup of the blueberries.
  2. Pour into crust. Sprinkle with remaining 1/2 cup blueberries.
  3. Bake at 350*F, 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Garnish with whipped topping and blueberries.
