1 boxyellow cake mix
1/3 cbutter, softened
3eggs, divided (1 and 2)
16 ozcream cheese, room temperature
1 csugar, divided (3/4 cup and 1/4 cup)
2 tsppure vanilla extract
1 Tbsppure vanilla extract
16 ozsour cream
1 can(s)pie filling, blueberry (or your fav. flavor)
How to Make Blueberry Cheesecake
- Heat oven to 350 degrees. Beat cake mix, butter and 1 egg in large mixer bowl on low speed until crumbly. Press lightly in ungreased 9 x 13-inch pan.
- Beat cream cheeses, 2 eggs, ¾ cup sugar and 2 tsp. vanilla until smooth and fluffy. Spread over cake mixture. Bake until set, 20 to 25 minutes.
- Mix sour cream, ¼ cup sugar and 1 Tbsp. vanilla until smooth. Spread over cheesecake, cool. Spread pie filling over sour cream mixture. Cover and refrigerate at least 8 hours.
