Not just any blueberry cake...this is my husbands favorite and also his birthday cake...his BD is coming next month so thought I'd get it out and post...will take a pic then.I have no idea where I got this recipe....just know its good. This is so good with homemade ice cream...that reminds me...time to get the machine out...Spring is here!! *MY pics

Ingredients

  • 1 1/3 cups all purpose flour
  • 2/3 cup cornmeal
  • 6 tablespoons vegetable oil..i use sunflower
  • 1 tablespoon vanilla
  • 10 tablespoons butter at room temperature (approx 2/3 cup)
  • 1 1/2 teaspoons salt
  • 3 cups fresh blueberies...i do use frozen thawed
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 large eggs
  • 1 teaspoon honey
  • 3/4 cup plus 3 tbsp sugar, divided
  • 1 cup ricotta cheese
  • 1/3 cup plain yogurt

How To Make blueberry cake

  • Step 1
    Spray a 10 inch springform pan and set aside. Mix together flour ,cornmeal, baking powder and soda. Whisk oil, eggs, honey and vanilla in another bowl. Beat butter,, 3/4 cup sugar plus 2 tbsps and salt until creamy. Add egg mixture. Beat to blend. Beat in flour mixture just to blend. Add ricotta cheese and yogurt.. Beat on low to blend.Put 1/2 the batter in pan and smooth out add 1 1/2 cupsof the blueberries. Spoon remaining batter over top, spreading to cover. Sprinkle remainig blueberries over topand sprinkle with the last tbsp of sugar. Bake approx 1 hour and 15 mins at 325. Cool...serve warm with homemade vanilla ice cream.
