This is a breakfast favorite in our house. Enjoy this warm with a bit of fruit salad and a nice cup of coffee.

Ingredients

  • 3/4 cup sugar
  • 1/4 cup butter, softened
  • 1 large egg
  • 1/2 cup milk
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups blueberries, fresh or frozen, rinsed and thoroughly dried.
  • TOPPING
  • 1/2 cup brown sugar, firmly packed
  • 1/3 cup all purpose flour
  • 1 teaspoon cinnamon
  • 1/4 cup butter, softened

How To Make blueberry buckle

  • Step 1
    First make cake batter. Combine sugar, butter and egg. Add milk. Set aside.
  • Step 2
    Sift together flour, baking powder and salt. Combine wet and dry ingredients just until combined.
  • Step 3
    Fold in blueberries. Pour into a 9" square pan.
  • Step 4
    Mix topping ingredients together using pastry cutter until medium crumbs form. Sprinkle over unbaked cake.
  • Step 5
    Bake at 375 degrees for 30 minutes. Serve warm.
