A German grandma would make one of these cakes when family dropped by. It can be made fast, and it's also gone fast...thus the lightning cake.

Ingredients

  • 1 cup butter
  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 cup sugar
  • 4 large eggs
  • 1 medium lemon, grate rind and save juice of 1 lemon
  • 1/2 cup cinnamon sugar mixture

How To Make blitzkuchen (german lightning cake)

  • Step 1
    Sift flour and baking powder together. Grease 9X13 cake pan. Preheat over to 350.
  • Step 2
    Cream butter and sugar. Add eggs, one at a time beat well. Add flour, lemon juice, and rind. Spread in greased pan. Sprinkle with cinnamon sugar mixture and bake 20 minutes.
