A German grandma would make one of these cakes when family dropped by. It can be made fast, and it's also gone fast...thus the lightning cake.

  • 1 c
  • 1 1/2 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 1 c
  • 4 large
  • 1 medium
    lemon, grate rind and save juice of 1 lemon
  • 1/2 c
    cinnamon sugar mixture

How to Make Blitzkuchen (German Lightning Cake)


  1. Sift flour and baking powder together. Grease 9X13 cake pan. Preheat over to 350.
  2. Cream butter and sugar. Add eggs, one at a time beat well.

    Add flour, lemon juice, and rind. Spread in greased pan. Sprinkle with cinnamon sugar mixture and bake 20 minutes.
