Ingredients

  • 1/2 c
    sugar
  • 1/4 c
    butter
  • 2 large
    eggs
  • 1 c
    unbleached all-purpose flour
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    cloves, ground
  • 1/4 tsp
    ground nutmeg
  • 1/3 c
    buttermilk
  • 1/2 c
    seedless blackberry jam
  • 1/4 c
    chopped walnuts
  • ICING INGREDIENTS

  • 2 Tbsp
    butter
  • 1/2 c
    brown sugar, firmly packed
  • 3 Tbsp
    milk
  • 1 3/4 c
    sifted confectioners' sugar

How to Make Blackberry Jam Cake

Step-by-Step

  1. Cream together sugar and butter.
  2. Beat in eggs.
  3. Stir together flour, and spices; add to creamed mixture alternately with butter/sour milk, beating until well blended after each addition.
  4. Fold in blackberry jam or preserves and nuts leaving swirls of jam, do not overmix.
  5. Turn into greased and lightly floured 9 x 9 x 2 inch baking pan.
  6. Bake at 350 degree oven 25 minutes or until done.
  7. Cool completely, then frost with Caramel Icing.
  8. CARAMEL ICING: In small saucepan, melt butter; stir in brown sugar.
  9. Cook stirring constantly, until mixture bubbles; remove from heat.
  10. Cool 5 minutes.
  11. Stir in milk and blend in confectioners' sugar; beat until spreading consistency is reached.
