- CAKE:
- 2 cups sugar
- 4 large eggs, separated
- 2 teaspoons baking powder
- 1 teaspoon nutmeg
- 1 cup cocoa powder
- 1 cup mashed potatoes
- 1 cup walnut pieces
- 1 cup raisins
- 1 teaspoon pure vanilla extract
- 3/4 cup butter
- 2 cups all purpose flour
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup milk
- FROSTING:
- 1/2 stick butter
- 2 squares - semi-sweet baking chocolate
- 2 - 3 cups confectioners' sugar

Step 1CAKE: Cream butter & sugar; add egg yolks. beat well. Sift together flour, baking powder, cinnamon, nutmeg, cocoa & salt. Dredge raisins in small amount of flour mixture. Add mashed potatoes to creamed mixture. Add the flour & milk alternately, beating after each addition. Stir in vanilla, raisins & nuts. Beat egg whites stiff, fold in mixture. Pour into greased & floured 10" tube pan. Bake at 325 degrees F. for 1 hour.

Step 2FROSTING: Melt butter & chocolate. Add sugar, beating to spreading consistency. Frost cooled cake.
