Ingredients

  • CAKE:
  • 2 cups sugar
  • 4 large eggs, separated
  • 2 teaspoons baking powder
  • 1 teaspoon nutmeg
  • 1 cup cocoa powder
  • 1 cup mashed potatoes
  • 1 cup walnut pieces
  • 1 cup raisins
  • 1 teaspoon pure vanilla extract
  • 3/4 cup butter
  • 2 cups all purpose flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • FROSTING:
  • 1/2 stick butter
  • 2 squares - semi-sweet baking chocolate
  • 2 - 3 cups confectioners' sugar

How To Make black walnut potato cake

  • Step 1
    CAKE: Cream butter & sugar; add egg yolks. beat well. Sift together flour, baking powder, cinnamon, nutmeg, cocoa & salt. Dredge raisins in small amount of flour mixture. Add mashed potatoes to creamed mixture. Add the flour & milk alternately, beating after each addition. Stir in vanilla, raisins & nuts. Beat egg whites stiff, fold in mixture. Pour into greased & floured 10" tube pan. Bake at 325 degrees F. for 1 hour.

    FROSTING: Melt butter & chocolate. Add sugar, beating to spreading consistency. Frost cooled cake.
