Started digging through old recipes in the back of my recipe box. I used this for family meals at holidays. It's also another good use for those too ripe bananas you're trying to figure out what to do with.

  • 1 pkg
    cream cheese ( 8 ounces) light, softened
  • 1 3/4 c
    sugar, divided
  • 1
    egg
  • 1/3 c
    candied cherries, chopped
  • 1/4 c
    miniature semisweet chocolate pieces
  • 2 c
    all-purpose flour
  • 1/3 c
    cocoa powder
  • 1 1/2 tsp
    baking powder
  • 2 large
    ripe bananas mashed (about 3/4 cup)
  • 1/3 c
    vegetable oil
  • 3/4 c
    water

How to Make black forest banana cupcakes

Step-by-Step

  1. Beat cream cheese in a small bowl until smooth. Add 1/4 cup of the sugar and egg: beat until well blended. Stir in cherries and chocolate peices: set aside.
  2. Combine flour, cocoa, baking powder and remaining 1 1/2 cups sugar in a large bowl. Add bananas, oil and water; stir until well blended.
  3. Spoon chocolate mixture evenly into 24 paper lined muffin cups. Spoon about 1 tablespoon cream mixture into the center of each cupcake.
  4. Bake at 350 F for 25 to 30 minutes or until a toothpick inserted into the center comes out clean. Remove from pan; let cool completely on wire rack.
