1 pkgcream cheese ( 8 ounces) light, softened
1 3/4 csugar, divided
1/3 ccandied cherries, chopped
1/4 cminiature semisweet chocolate pieces
2 call-purpose flour
1/3 ccocoa powder
1 1/2 tspbaking powder
2 largeripe bananas mashed (about 3/4 cup)
1/3 cvegetable oil
How to Make black forest banana cupcakes
- Beat cream cheese in a small bowl until smooth. Add 1/4 cup of the sugar and egg: beat until well blended. Stir in cherries and chocolate peices: set aside.
- Combine flour, cocoa, baking powder and remaining 1 1/2 cups sugar in a large bowl. Add bananas, oil and water; stir until well blended.
- Spoon chocolate mixture evenly into 24 paper lined muffin cups. Spoon about 1 tablespoon cream mixture into the center of each cupcake.
- Bake at 350 F for 25 to 30 minutes or until a toothpick inserted into the center comes out clean. Remove from pan; let cool completely on wire rack.
