I don't know where this recipe came from, but my mother made this when I was growing up. It is still a favorite. Yes, there really are no eggs in the cake part of the cupcake. It surprised me too.

Ingredients
- FILLING
- 8 ounces cream cheese, softened
- 1/8 teaspoon salt
- 1/3 cup sugar
- 1 - egg
- 6 ounces semi-sweet chocolate chips
- BATTER
- 1 1/2 cups all purpose flour
- 1 cup sugar
- 1/2 teaspoon salt
- 1/3 cup canola oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 cup cocoa, unsweetened
- 1 cup water
- 1 tablespoon vinegar

Step 1Preheat the oven for 350 degrees.

Step 2Beat together cream cheese, sugar, egg and salt. Add chocolate chips. Set aside.

Step 3Beat all batter ingredients together until blended.

Step 4Place cupcake liners in regular muffin/cupcake pan. Fill cupcake liners 1/3-1/2 full. top each with a heaping teaspoon of cream cheese filling.

Step 5Bake at 350 degrees for 20-30 mintes.
