I don't know where this recipe came from, but my mother made this when I was growing up. It is still a favorite.

Yes, there really are no eggs in the cake part of the cupcake. It surprised me too.

Ingredients

  • FILLING

  • 8 oz
    cream cheese, softened
  • 1/8 tsp
    salt
  • 1/3 c
    sugar
  • 1
    egg
  • 6 oz
    semi-sweet chocolate chips
  • BATTER

  • 1 1/2 c
    all purpose flour
  • 1 c
    sugar
  • 1/2 tsp
    salt
  • 1/3 c
    canola oil
  • 1 tsp
    vanilla extract
  • 1 tsp
    baking soda
  • 1/4 c
    cocoa, unsweetened
  • 1 c
    water
  • 1 Tbsp
    vinegar

How to Make Black Bottom Cupcakes

Step-by-Step

  1. Preheat the oven for 350 degrees.
  2. Beat together cream cheese, sugar, egg and salt. Add chocolate chips. Set aside.
  3. Beat all batter ingredients together until blended.
  4. Place cupcake liners in regular muffin/cupcake pan. Fill cupcake liners 1/3-1/2 full. top each with a heaping teaspoon of cream cheese filling.
  5. Bake at 350 degrees for 20-30 mintes.
