I don't know where this recipe came from, but my mother made this when I was growing up. It is still a favorite. Yes, there really are no eggs in the cake part of the cupcake. It surprised me too.

Ingredients

  • FILLING
  • 8 ounces cream cheese, softened
  • 1/8 teaspoon salt
  • 1/3 cup sugar
  • 1 - egg
  • 6 ounces semi-sweet chocolate chips
  • BATTER
  • 1 1/2 cups all purpose flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/3 cup canola oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 cup cocoa, unsweetened
  • 1 cup water
  • 1 tablespoon vinegar

How To Make black bottom cupcakes

  • Step 1
    Preheat the oven for 350 degrees.
  • Step 2
    Beat together cream cheese, sugar, egg and salt. Add chocolate chips. Set aside.
  • Step 3
    Beat all batter ingredients together until blended.
  • Step 4
    Place cupcake liners in regular muffin/cupcake pan. Fill cupcake liners 1/3-1/2 full. top each with a heaping teaspoon of cream cheese filling.
  • Step 5
    Bake at 350 degrees for 20-30 mintes.
