billie's banana nut cake
This recipe was shared by a friend at a quilting retreat. It is delicious and very tender! She originally got it from a friend of her mother's, Billie Howeth-Strong.

Ingredients
- 3 large eggs
- 1/2 cup oil
- 2/3 cup water
- 3 - ripe bananas, mashed
- 1 box yellow cake mix
- 1 box instant vanilla pudding
- 3/4 cup chopped nuts
- ICING
- 2 1/2 cups powdered sugar, sifted
- 1 small ripe banana, mashed
- 1 teaspoon oil
- 1 cup chopped nuts
- 1 teaspoon lemon juice, optional, to prevent banana darkening. bq
How To Make billie's banana nut cake

Step 1Bake in a prepared Bundt pan (sprayed with non-stick cooking spray) for 45 minutes in a preheated 350-degree oven.

Step 2CAKE: Preheat oven to 350 degrees. Combine eggs, oil, water, and mashed bananas.

Step 3Add yellow cake mix and instant vanilla pudding mix to the first four ingredients. Mix well. Stir in 3/4 cups chopped nuts.

Step 4ICING: Mix powdered sugar, mashed banana, oil and lemon juice, if used, well. Add 1 cup chopped nuts. Drizzle over cooled cake.
